Just a few years ago many of the ingredients, we now take for granted, were considered either completely mysterious or threateningly foreign and exotic.

Once we only had rice, now we have jasmine, Arborio, basmati, sushi close at hand to serve as an accompaniment to the main course or even main course itself. Mizuna, fresh coriander leaves and baby rocket nestle up to the iceberg in our salads. Bottles of mirin, kecap manis, fish sauce and chermoula next to the Worcestershire sauce, balsamic vinegar and barbeque sauce on our shelves. Yes, we still season with salt and pepper, but also with sumac, cumin, cardamom, star anise and …
